Work Out Time

Today is my first day of exercise since I have had since having baby H. Wow! I never expected how hard even simple routines would be. While baby H slept I started off with a simple yoga routine that you use to be a piece of cake for me and today all I felt was pain and no flexibility. Next I did a ten minute cardio workout with lots of jumping jacks and squats that had me way out of breath! I am so dissapointed at the level of fitness my body has dropped to. But I know I will improve over the months. I just have to keep swimming as they saying goes. I wish everyone the best of luck with their workout endeavors and I really hope you all keep them up!

Directions For A Healthy Chicken Teriyaki


Ingredients

  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons dry sherry
  • 2 tablespoons rice vinegar
  • 2 garlic cloves, crushed with a garlic press or minced
  • 1 teaspoon finely grated fresh ginger
  • 1/4 teaspoon red pepper flakes
  • 2 pounds skinless chicken thighs
  • 2 teaspoons sesame seeds

Combine the soy sauce, sugar, sherry, vinegar, garlic, ginger and red pepper flakes and stir until the sugar dissolves. Transfer to a resealable plastic bag and add the chicken. Seal the bag and marinate the chicken in the refrigerator, turning once, for 1 hour. The chicken can be marinated for up to 4 hours.

Heat the broiler to high. Arrange the chicken on a broiler pan skin side down and broil until brown and crispy, 8 to 10 minutes. Flip the chicken and broil until almost cooked through, about 8 minutes longer. Sprinkle with sesame seeds and cook until the seeds turn golden brown and the chicken is done, 1 to 2 minutes longer.


Make some Brown rice with this meal and throw in kale as well for a healthy dinner!

Happy New Year!

I cannot believe it is already 2012! I haven't posted since 2011 but things have just been so hectic. Baby H blessed us with her presence in November and since that time my life has been baby overload. Between holiday parties, playdates, music classes and mommy and me time there really is very little time for anything else. I couldn't be happier though because baby H has been the most amazing blessing to our family. I do not know how I ever lived without her. A mother's love is truly indescribable and must be felt. Our labor was quite the ordeal and I will be do a post soon with details. I had gone into the labor thinking I could deliver with no epidural and all natural but in the end that isn't what happened. But all that matters is I had a beautiful healthy baby girl. Baby H is now almost 2 months! I cannot believe how fast the time has gone! I will be using this blog to document my journey with her and hopefully everyone finds some connections in my tale!
